I love this simple last-minute soup! It’s something that I came up to feed my in-laws and parents at the last minute.

It’s something I talked about in my “11 Tips for Winter Wellness” podcast and people were asking for the recipe so here it is! (See link in profile for the recording)

Anyway, I needed something delicious and healthy. Grandparents can sometimes be as picky as the kids in terms of getting their veggies.

And I just can’t in good conscience feed them junk food.
.
It had to be something I could make with what I already had
.
Which was
-a bag of baby carrots
-a bag of greens, and
-an onion
.
So voila! Last-minute soup
.
The best thing is all the veggies are cooked down, it’s a nutrient-dense meal
.
Packed with antioxidants, B vitamins, and minerals
.
A little bit of healthy oil adds a smoothness
.
Plus, you can add your choice of protein on top to round it out for a full meal
.
The kids gobbled it up, too!!!
.

Also, I shared one of my secret ingredients: Borsari original or citrus blend. It makes everything taste good!
